Two competitors brew at the same time. The competitor receiving the most judge votes advances to the next round.
Competitors must use the designated coffee and approved brewing equipment. Nothing other than water may be added to the beverage.
Each competitor receives 3 minutes to prepare their station, equipment and brewing plan before the round begins.
Brewing time is 5 minutes. Time calls are given with 2 minutes, 1 minute and 30 seconds remaining.
Serve at least 150 ml in the designated area and raise your hand to finish. The timer stops only when your hand is raised.
Serving order is rearranged before tasting. Competitor names are placed on the bottom of the cups and hidden during judging.
Judges vote independently on sweetness, flavour, acidity, body, aftertaste and bitterness. Judges may not discuss their votes.
One additional vote covers equipment use, workstation cleanliness, item placement and the cleanliness of the serving cup.
Exceeding the 5 minute brewing time results in disqualification. The chief judge decides whether equipment failure requires a timeout.
